Simple Fruit Cake

Nobody hates cake. If you're on a diet,try avoiding the frosting. That way you're healthy and soul satisfied.

 250 g Dried fruits (raisins)
 50 ml Brandy
 2000 g Unsalted butter
 150 g Sugar
 4 eggs
 1 cup Walnuts
 1 cup Orange peels
 200 g Cake flour
 1 tsp Yeast

In a large bowl, place the mixed dried fruit and add brandy or iced coffee mix and cover then place it in the fridge overnight.

Preheat the oven to 170°C. Take your butter and apply your preferred baking pan, then line the baking pan with a baking sheet.

In another large bowl, take the butter and sugar then mix it well with a mixer at a low speed.

Once the two are mixed add the eggs and continue to mix until the mixture becomes fluffy-like.

Add in your dried fruits,the orange peels and the nuts. Mix with a spatula not the mixer.

Add flour and yeast then mix it with the spatula

Put the mixture in your baking pan and cook it for atleast 70minutes.

The cake is cooked if the chopsticks comes out clean.
Serve the cake cold.

The recipe is simple but you need to know whether your oven is fan forced or conventional oven. Fan forced oven is higher by 20°C so for it to be at the same temperature with the conventional oven,reduce it by 20°C.
